Basmati Rice Pilaf with Goji Berries and Indian Spices

Ingredients
- 2 tsp cumin seeds
- 1½ TB olive oil
- 1 small onion. thinly sliced
- 1 tsp turmeric
- 1 medium carrot, grated
- 1 cup Basmati rice
- ½ tsp salt or to taste
- ¼ cup dried goji berries
- ½ cup frozen peas, thawed
Instructions
- Heat the oil in a medium saucepan over medium heal. Add the cumin seeds and cook. stirring, until fragrant and seeds start to color.
- Add the sliced onion and cook until soft.
- Next, add the turmeric, stir and heat for 20 seconds.
- Add the grated carrot and cook for one minute.
- Add the basmati rice, salt and 1¾ cups water. Bring to a boil, cover and cook for about 12 minutes until the water is absorbed.
- Remove from heat. Fold in the goji berries and peas. Let stand covered for 10 minutes. Fluff with a fork and serve.
