Hearty Lentil and Rice Burger

Serves: 6 patties
  • ½ cup dried green lentils, rinsed
  • ½ cup brown rice
  • 1 medium yellow onion, chopped
  • 1 carrot, grated
  • 4 garlic cloves, minced
  • 3 tsp. ground cumin
  • 1 tsp. ground sage
  • 1 tsp. sea salt
  1. Cook ½ c dried lentils and ½ cup brown rice ahead (leftovers work great!)
  2. Cook onions in saucepan over medium heat for 4-5 minutes, until slightly translucent. Add carrot, garlic, cumin, sage, and salt and stir for 3-5 more minutes. Then add rice and lentils.
  3. Smash with a potato smasher until smooth, or mix in food processor. The mixture should be easy to form into patties. If it is too moist, add grated GF bread crumbs.
  4. Prepare a medium-hot fire in the grill with a lightly oiled vegetable rack in place. Grill the burgers until crisp, about 5 minutes per side.
  5. Serve on a salad or wrapped in lettuce with your favorite toppings.
  6. Serve with hearty salad.
