Turkey Lentil Soup

TURKEY LENTIL SOUP

Ingredients
  • 1 pound of dark ground turkey
  • 28 ounces chicken broth
  • 1½ cup water
  • 1 package red lentils
  • 1 chopped medium onion
  • 4 celery sticks chopped
  • 4 medium carrots chopped
  • 3 cloves garlic minced
  • 2 Tbls. chopped fresh ginger
  • ½ tsp. red pepper flakes
  • 2 tsp. yellow curry powder
Instructions
  1. Wash lentils and soak in cold water.
  2. Brown turkey in olive oil.
  3. Saute onion, garlic, celery, carrots, ginger in olive oil.
  4. Add red pepper and curry powder to sauteed veggies.
  5. Drain lentils.
  6. Heat chicken broth and water.
  7. Combine all ingredients in large crock pot and cook on low 8 hours.
  8. Salt to taste.
