Carrot Ginger Dressing

A delicious veggie based dressing – try over a salad of thinly sliced Savoy cabbage or some spicy greens!
2 medium carrots, chopped, peeling optional
1 stalk celery chopped
1/4 c vinegar – rice or apple cider
1/4 cup mellow white miso
1.5 T toasted sesame oi
2 T finely grated ginger
6 T neutral oil like grapeseed
1 tsp lime juice

Whiz in high speed blender. The consistency is thick and, at the same time, it’s light!
