Super Simple Broccoli Soup

Ingredients
  • 1 large head of broccoli or 2 small ones broccoli (a couple of heads), coarsely chopped
  • 1-2 cups of water
  • 1 tsp olive oil
  • ½ teaspoon Celtic sea salt
  • Fresh lemon (optional)
Instructions
  1. Steam 1 head of broccoli for 3 minutes
  2. Put it in the blender, along with water from steaming (it will cover just part of the broccoli)
  3. Whiz lightly, or to taste (I like it a little chunky)
  4. Add a pinch of salt, a squeeze of lemon or lime, and a little olive oil. `
  5. Or skip the lemon and leave it savory.
  6. That's it.
  7. Eat it as a soup or serve it over rice, or baked potatoes!
