Roasted Cauliflower with Chickpeas

  • 1 head of cauliflower
  • 1 can (rinsed) or 1½ cups of cooked chickpeas
  • 3 T olive oil
  • 1 clove garlic, smashed and diced
  • ½ tsp paprika
  • ½ tsp turmeric
  • ½ tsp chili
  • dash of salt and pepper, to taste
  • Juice of ½ lemon
  • After baking: stir in 1T parsley and/or cilantro
  1. Mix all ingredients (except cauliflower and chickpeas) in a bowl, whisk or stir up with a fork.
  2. Break or cut cauliflower into bite size pieces, and add to mixture, along with chick peas
  3. Bake for 35-40 minutes, stirring occasionally with a spatula
  4. Add fresh herbs, parsley and/or cilantro, after baking, while still hot.
  5. Serve over wild rice, quinoa or other grain of your liking!
