Roasted Cauliflower with Chickpeas

Ingredients
- 1 head of cauliflower
- 1 can (rinsed) or 1½ cups of cooked chickpeas
- 3 T olive oil
- 1 clove garlic, smashed and diced
- ½ tsp paprika
- ½ tsp turmeric
- ½ tsp chili
- dash of salt and pepper, to taste
- Juice of ½ lemon
- After baking: stir in 1T parsley and/or cilantro
Instructions
- Mix all ingredients (except cauliflower and chickpeas) in a bowl, whisk or stir up with a fork.
- Break or cut cauliflower into bite size pieces, and add to mixture, along with chick peas
- Bake for 35-40 minutes, stirring occasionally with a spatula
- Add fresh herbs, parsley and/or cilantro, after baking, while still hot.
- Serve over wild rice, quinoa or other grain of your liking!
