Simple Kale Salad
Recipe type: Lunch
Serves: 2-4
Ingredients
- 5 leaves of kale chopped finely
- ½ cup parsley chopped
- ½ cup cilantro chopped
- 1 scallion finely chopped
- 1 cup broccoli chopped and very lightly steamed
- 1 large beet grated
- Dressing:
- ½ cup olive oil
- 2 lemons squeezed
- 2 T apple juice
- 1 piece of ginger
- ¼ cup Apple Cider Vinegar
- Optional: Walnuts or Almonds slivers for topping.
Instructions
- Mix all ingredients, except for broccoli, in bowl. Add 2 T dressing and massage into the kale to soften.
- Add broccoli and allow to sit for 10 minutes. Sprinkle walnuts or almond slivers on top.
