TURKEY LENTIL SOUP

Ingredients
- 1 pound of dark ground turkey
- 28 ounces chicken broth
- 1½ cup water
- 1 package red lentils
- 1 chopped medium onion
- 4 celery sticks chopped
- 4 medium carrots chopped
- 3 cloves garlic minced
- 2 Tbls. chopped fresh ginger
- ½ tsp. red pepper flakes
- 2 tsp. yellow curry powder
Instructions
- Wash lentils and soak in cold water.
- Brown turkey in olive oil.
- Saute onion, garlic, celery, carrots, ginger in olive oil.
- Add red pepper and curry powder to sauteed veggies.
- Drain lentils.
- Heat chicken broth and water.
- Combine all ingredients in large crock pot and cook on low 8 hours.
- Salt to taste.
